The Tuscan cowpeas produced by the Fattoria di Arcetri Farm are a delicious traditional tuscan food, authentic Italian beans with a curious name (“fagioli dall’occhio”, or literally “beans with an eye”) describing their appearance.
They are easily recognizable by the small black spot on the lateral side (the “eye”), which makes them unique among the legume families.
Since the beginning of the cultivation of the European “traditional” beans, the Tuscan cowpeas has been abandoned over time, due to the hard work their production requires. Thanks to the passion of Guido and of the entire Arcetri Farm (and to the other farmers like them) today is still possible to taste this delicacy, with strong nutritional properties (they are rich in vitamins and minerals such as potassium, magnesium, iron zinc, calcium and selenium).
Moreover they are very rich in proteins (about 23% in its dry state) and have a high quantity of fibers (around 18%) qualities that respond perfectly to the dictates of a low-calorie diet made of genuine ingredients and with a low content of fat. Savor a great healthy food!
You can serve the Tuscan cowpeas, the Tuscan beans, as a main dish, a side dish, as the main ingredient of a soup, or, if you are a lover of the ancient recipes, as one of the top ingredients of the “ribollita” in its most refined version.
